Baxin
Baxin is a simple cookie typical of Albenga in Liguria, Italy. Although it is not as famous as some other Ligurian sweets, it has a long history – supposedly the Benedictine monks were producing and selling them since the 18th century. These golden yellow sweets consist of flour and sugar, and they are flavored with anise seeds, cloves, cinnamon, and lemon zest. The classic version is definitely a treat, but today you can also enjoy them in different colors and flavors such as baxin with coffee, orange, chocolate, banana, raisins, strawberries, or pistachio.
