Hummus is a velvety, savory dip or spread that has transcended its Middle Eastern origins to become a global culinary sensation. The word 'hummus' literally means 'chickpeas' in Arabic, and the full name of the dish, 'hummus bi tahini', describes its two primary ingredients: chickpeas and tahini (sesame paste). To create this beloved dish, cooked chickpeas are blended with tahini, olive oil, lemon juice, garlic, and salt until smooth and creamy.

While the base recipe is simple, the quality of ingredients and the technique define a great hummus. The chickpeas must be tender, often soaked overnight and simmered until they almost fall apart. The tahini should be high-quality and nutty without being overly bitter. The balance of lemon and garlic is a matter of personal and regional preference, but it should brighten the rich, earthy flavors of the legumes.

Hummus is a staple of the Levantine cuisine (Lebanon, Syria, Israel, Palestine, Jordan) and is often served as part of a mezze spread. It is traditionally presented on a plate with a well in the center, typically filled with a pool of good olive oil and garnished with whole chickpeas, paprika, cumin, chopped parsley, or even toppings like sautéed ground lamb or pine nuts. It is scooped up with warm pita bread or fresh vegetables.

Beyond its delicious taste, hummus is celebrated for its nutritional profile, being rich in plant-based protein, fiber, and healthy fats. It represents hospitality and sharing in Middle Eastern culture, often being the first dish placed on the table to welcome guests.

Hummus

The hummus was okay, though I expected it to be a bit creamier—the bitterness was quite strong. However, the other mezzes were absolutely great.
