The flatbread looks like thin leaves with long cracks, and it was originally made for shepherds who took it with them to the pastures because it keeps very well &ndash; if kept dry, it stays edible for a whole year. The dough is rolled as thinly as possible, and it is then baked until the edges start to rise up. Pane guttiau is often brushed with olive oil and sprinkled with sea salt, then eaten as a snack. It's also commonly served with salami and cheese.

The crunchy-crusted pane Pugliese, a porous rustic bread whose origins can be traced to the 15th century, is said to be a legacy of the brown country bread which was brought to Apulia by the Turks who ruled the south of Italy at the time. This delicious peasant-style sourdough bread is made with only flour, water, and yeast, but the secret to making a perfect, slightly domed Pugliese loaf is in the kneading technique, namely the wet dough folding method. Even though the slack dough is very hard to work with, it produces a wonderful, airy texture, while long fermentation enhances the rich flavors of this bread. Prepared in the same traditional way for hundreds of years, the Sicilian pane a l'antico rustico or simply pane rustico is a type of homemade sourdough bread. Crusty on the outside and wonderfully tender on the inside, it is also great as an accompaniment to cold cuts and cheese. A loaf of this traditional Ticino bread usually consists of five sections which are meant to be broken apart with your hands and shared. It is traditionally made with flour, water, yeast, salt, and oil. Before baking, the dough is often brushed with milk or egg wash, resulting in a nice golden brown crust once baked. It is believed that the shape of this bread was brought over to Ticino from Italy, but it became popular throughout Switzerland in the 1950s.

Traditionally made since the Middle Ages, pane Toscano or pane sciocco is a variety of bread commonly found in the central Italian regions of Tuscany, Umbria, and the Marches. Back then, to show their displeasure with the imposed regulations and high taxes on salt, the Tuscans started baking their bread without salt, hence the name pane sciocco (lit. tasteless bread). Due to its bland taste, the salt-free Tuscan bread is not quite intended for eating on its own, so it is typically served fresh from wood-fired ovens with cured meat products such as prosciutto, salami, or strong cheeses in order to balance out their saltiness and intense flavors. Drizzled with olive oil and smeared with mashed garlic, pane Toscano also makes for a delicious fettunta (similar to an untopped bruschetta), but it is more often used in various soups and stews such as zuppa di pane Toscana.

Pane Valle Maggia is a traditional bread originating from Lugano in Switzerland. The dough is prepared with a combination of water, yeast, rye flour, wheat flour, sourdough starter, and sea salt. The dough is shaped into a boule and it's then baked until it develops a crispy crust. The crumb should not be very open, but not too dense either. It's recommended to cut the bread into thick slices and serve it with cold cuts and olives on the side.

Peruvian pan franc&eacute;s is a small, oval-shaped roll with a golden-brown crust made with only flour, water, yeast, sugar, and salt. It is distinguished by a notable indentation down its center, creating a signature look. And although the name translates as "French bread", the Peruvian pan franc&eacute;s is nothing like French bread. This bread is a staple in many Peruvian households and serves as the foundation for the famed butifarra sandwich.

Pan Gallego is a traditional crusty bread originating from Galicia. It is characterized by a soft and springy crumb with many air pockets and a hard crust, depending on the variety. In artisan bakeries, it's made with wheat flour or trigo gallego (Galician wheat), a sourdough starter, salt, and large amount of water. The bread needs long rising times &ndash; at least 3 hours &ndash; and baking times. There are four types of loaves &ndash; the bolo or hogaza, a misshapen round loaf with small cracks on the upper part and often with a topknot; the rosca, an irregular and flat ring of bread; the bola or torta, which is round and flat; and the barra, a baguette-type loaf. The bread is aromatic with an intense wheaty flavor and slightly acidic notes. For the best experience, try it with a cheese called La Tetilla.

Panini di Sant'Antonio is a traditional soft bread bun originating from Tuscany. It's made with a combination of flour, milk, sugar, oil, eggs, yeast, salt, and a bit of rum. The dough is rolled into balls which are then brushed with egg wash and baked until golden brown. Once baked, these buns are brushed with a syrup consisting of sugar and water. These sweet bread buns are traditionally taken to church to be blessed, and in the past these buns were blessed than distributed to the peasants as a sign of protection of Saint Anthony. You can enjoy them warm or at room temperature, plain or served with ricotta and fruit jams, but also with savory ingredients such as mortadella or prosciutto.

Before baking, the oval pieces of dough are folded in half and dipped in butter. However, the dough can be cut into triangles and shaped into crescents, or cut into strips and braided.

Parotta is a traditional Southern Indian flatbread, usually sold as street food. It is also popular in Malaysia and Sri Lanka. It is made with oil or ghee, water, refined wheat flour known as maida (unlike parathas, which are made with regular wheat), and occasionally eggs.
