Merve Pide 2

Chamar-lhe pizza turca engana no essencial.

Avalie primeiro a base.

Lahmacun

Terme pidesi is the open-faced pide of Terme, a district of Samsun on Turkey's Black Sea coast, and the odd one out among the region's pides: where the neighbouring Bafra and Çarşamba versions are rolled closed into long sealed logs, Terme's is left open, a thin boat of dough with raised edges and the topping fully exposed, baked in a wood-fired oven until the base is crisp and the edges blister. Samsun is Turkey's pide province and the three towns argue over whose is best, with Terme's case resting on the contrast between its thin, crisp floor and the generous, visible topping. The standard toppings are kıymalı with spiced minced beef, kuşbaşılı with hand-cut cubes of meat, kaşarlı with melted kaşar cheese, and the combination of pastırma and cheese; an egg cracked onto the pide for the last minute of baking is common, and the finished pide is brushed with butter and cut into strips.

The dough is a plain lean bread dough of flour, water, yeast, salt and a touch of sugar, proofed, divided and rolled into a long oval barely three millimetres thick in the centre, with the edges rolled or pinched up to form a rim about a centimetre high. The topping goes on raw and spreads to the rim: for kıymalı, minced beef mixed with onion, tomato, green pepper, parsley, salt and pepper and spread thin; for kuşbaşılı, small cubes of lamb or beef cooked briefly first so they do not release water onto the dough; for kaşarlı, grated kaşar in an even layer. The pide is slid onto the floor of a very hot wood-fired oven, around 350°C, for five or six minutes, turned once so it colours evenly, and pulled when the edges are blistered brown and the base is rigid. It is brushed with melted butter, cut crosswise into fingers, and served at once with lemon, parsley and sometimes a side of sliced onion.

Judge the base first: lift a strip and it should hold straight, with a crisp, blistered, lightly charred underside and a thin centre that does not sag under the topping. The rim should be golden and crackling with an open crumb, and the topping should cover the surface to the edge, cooked through, with the meat juicy and the onion and tomato softened into it rather than sitting raw. Mark down a soft or pale base, which means the oven was not hot enough, a thick doughy pide that eats like a flatbread with mince on it, a topping that stops short of the rim or has leaked water and made the centre wet, dry grey mince, cheese that is oily rather than melted, and a pide held and reheated, which shows as a leathery base. The butter brush at the end is standard and should be visible as a sheen, not a pool.

Ingredient amount was good, size is large to feed 1 adult. taste is better than average. Price is good.
I had the kuşbaşılı kaşarlı only for 160 try

Lahmacun takes two or three minutes in a very hot oven: a round of dough rolled thinner than a cracker, a little wider than a dinner plate, spread with a paste of minced lamb or beef, onion, tomato, red pepper and parsley. The name comes from the Arabic lahm bi ajin, meat with dough, which is a fair description of the whole dish. It is eaten across south-eastern Türkiye, Syria and Lebanon, and Armenians make a close relative they call lahmajo. In Türkiye the home ground is Gaziantep, Şanlıurfa and Adana, where it is a lunchtime order rather than a snack, and a single person will put away two or three. Calling it Turkish pizza misleads on the main point: there is no cheese, the topping is scraped on thinly rather than piled, and the base is closer to a cracker than a bread.

The dough is a plain flour, water, salt and a little yeast mixture, rested, then rolled or stretched to about two millimetres so it bakes through before the meat dries out. The topping is where the work is. Fatty meat is chopped fine with onion, tomato, biber salçası (red pepper paste), parsley and, depending on the town, garlic or pul biber; in Antep many ustas insist on a zırh, the curved knife, rather than a mincer, because grinding squeezes out the juice that should stay in the meat. The paste goes on with the back of a spoon or the fingertips until the dough shows through in places. The oven is the deciding factor: a stone-floored taş fırın running well above 400°C blisters the edge and sets the meat in the time it takes to slide the next one in. In a domestic oven the base steams and the meat cooks grey.

Judge a lahmacun on its base first. It should be crisp enough at the rim to snap and pliable enough in the middle to roll around a handful of parsley, sliced onion with sumac and a squeeze of lemon, which is how it is eaten: rolled, not cut. Look for charred freckles underneath and a topping that has caramelised at the edges but is still moist in the centre. A thick, bready base, a topping layered like a meat pie, or a sauce-like red paste that tastes mostly of tomato are all signs of a kitchen imitating pizza. Cold lahmacun reheated on a flat grill is acceptable in a kebapçı at four in the afternoon; one that has gone leathery is not. The acılı (spicy) version from Şanlıurfa carries real heat, so check which you ordered before marking it down.

Not so crispy, thicker than it was supposed to be, taste is average, worth the price because it was only 60 liras
Service was a bit slow probably due to iftar time
