I think this is the most delicious thing I've eaten in Ankara. That's why I gave it a 9.01 after my previous highest score of 9. It's climbed quite high on my Bitecritic rankings. My expectations were low since it's just soup. The soup arrives quickly. It's hot. Although the meat looks sparse in the photo, the bottom of the bowl is full of meat. The meat isn't thinly sliced, and you can feel the meat as you bite and swallow. The meat is incredibly tender. There's a protective layer around the garlic sauce, like a freezer bag, which seems hygienic. The bread is soft. It's a very delicious tripe soup. I'll definitely come again. The shop is open 24/7. The place is nice, and it's packed at lunchtime... I really liked it, you should definitely come.
The soup was almost cold, it had no salt, and I didn't have a tasty soup. They need to improve the shop.
Even though I didn't add lemon to the soup, it was sour, and there was a hair in it, but we thought it's head meat, so it happens. The meat was thinly sliced and a little salty. It's nice that they have a toaster in the shop, but we've had better head meats elsewhere, I wouldn't choose this place again.
It was a wonderfully warm and delicious soup. The consistency, taste, and seasoning were perfect. It comes with garlic, and you can add as much as you like. I'll definitely come back for it again.
Although Hebun soup is generally good with its varieties, I strongly recommend the most important soup, Kelle Pacha, it is worth its money, both the portion and the taste are very good, if you are sick, adding more hot water and garlic will easily ward off the illnesses.
Kelle Paça is not seasoned, this is where the biggest difference comes into play. Other than here, most places serve the offal you want in seasoned broth. This way, the meat and soup do not integrate. You do not encounter this problem here. The garlic and hot peppers that come with the soup are not lethal. I recommend it.
Sheep's head and trotters, simmered for hours until the meat slips from the bone and served with garlic vinegar, a spoon of melted butter with red pepper and lemon: kelle paça çorbası is the soup Türkiye eats while the rest of the country is asleep.
