Kelle paça çorbası is a traditional soup made with offal as the key ingredient. Sheep's or goat's head are placed into a pot with water, onions, and salt, and the soup is then slowly cooked until the meat falls off the bones. Some people like to add a roux of butter and flour to the soup, followed by a beaten egg, garlic, and lemon juice. Lamb neck, tongue, and brain can also be included in the soup. It's recommended to serve the soup with greens and lots of crusty bread on the side.

Döner kebab is a delicacy that is known throughout the world, consisting of grilled pieces of meat that are shredded from a vertical skewer. The meat is typically seasoned with fresh herbs and spices. Originally, the meat used in döner was exclusively lamb, but today in Istanbul, there are kebabs prepared with a combination of lamb and beef, or sometimes only with beef. Meat that is grilled vertically on a skewer isn't a new thing, as it has been mentioned in the 18th-century Ottoman travel books. The sandwich form döner kebab, which means rotating kebab, appeared in the early 1970s in Berlin. It is believed that Kadir Nurman was the first to place the shaved pieces of meat into a flatbread and serve it with vegetables such as tomatoes, lettuce, onions, cucumbers, and a squirt or two of sauce, unlike before, when the ingredients were served on a plate. Along with many of the Turkish variations on döner kebab, there are also numerous other regional variations in countries such as Armenia, Vietnam, Austria, Germany, France, and the United Kingdom.

Döner kebab

Tadı rahiyası tuzu çok iyiydi. Etleri boldu ve güzel pişmişti ağızda dağılıyordu. Diğer çorbalara göre favorim bu.

There is always a discussion between our friends where to eat doner kebap in Amsterdam?

I regularly eat in here and like it. Unfortunately it wasn’t the case for me this afternoon. Still a nice taste like in my hometown Ankara. This time the meat was cooked a lot and i felt it dry.

I tried the plate version and dürüm version. Still a nice food but i realised every time i come here before 4pm the meat is usually dry.

If you are planning to go here, go there after 4pm which you will have freshly cut meat.
