The best kebab in Ankara, by our scores, is at Guşgana Kebap & Fırın in Mutlukent: its Adana kebab scored 9.62/10. Next come Antakya Efsanesi in Kızılay (9.50) and Gıyma Kebap in Öveçler (9.00). One honest caveat: all three sit up there on a single review each.

This is not a list of names someone gave us. We went to 16 kebab restaurants in Ankara, ate the grilled and skewered kebabs and scored them out of 10 on BiteCritic: Adana, liver şiş, lamb şiş, beyti, yaprak kebabı and more. There are 20 reviews in total, and each records what the reviewer paid and when they went. 12 of the 16 restaurants have only one review. We say so for every place, because one evening's score is not the same thing as the average of ten.

A sit-down kebab restaurant in Balgat with a smarter feel. Two reviews on two different days. One reviewer ordered the mahalle kebabı: the Adana was very tasty, the beef şiş tender and the liver good, and everyone at the table left happy. Points were lost because salt, cumin and black pepper were not on the table. It was packed on a Saturday with seven or eight people waiting at the door, so the reviewer suggests booking by phone.

The other reviewer tried the aubergine kebab and places the restaurant in the upper-middle class, with valet parking and a waiting lounge, but found menu prices lower than expected. The meat was tasty and the aubergine blander than the meat.

The reviewer forgot to take a photo on the first round because the meat and fat were so good. The only deduction was one skewer from the second round of five that was a little burnt; the remaining nine were fine. Their tip is to sprinkle on cumin and chilli flakes and roll it in the tomato-paste bread. They found the number of mezes generous, and the shop was crowded.

It is open from 09:00 until 02:00, so it is an option for liver late at night.

It fell apart at the touch of the knife and again in the mouth, with a good fat ratio and a mild heat that was just what they wanted.

One reviewer, one day, two kebabs, and they landed far apart. The Adana kebab had none of the dryness the reviewer usually finds in Adana kebabs, and the meat tasted superb; the only complaint was a small portion. The grilled lamb was another story: tough, under-salted, with gristle in some pieces, and the verdict was that it is not worth 1000 liras.

Two visits by two different reviewers, a year apart. The first ordered home delivery and the kebab was still hot, praising the heavily sauced bread and the Hatay-style kebab, though it was not spicy and could have used more sauce. The second tried the harbiye kebab and explains the lower score by saying they were perhaps comparing it with what they had eaten in Hatay: too little tomato sauce, too little salt, the meat a little dry. They gave the mezes a 10.

The bread is soft and easy to bite and does not overpower the meat. Ordering a half on top of a whole brings on the regret of having eaten too much.
