Sucuklu Pide features the bold flavors of sucuk, a spicy, garlic-laden fermented Turkish sausage. Slices of sucuk are arranged over a layer of melting kasar cheese on the boat-shaped dough. During baking, the fat from the sucuk renders out, mingling with the cheese and infusing the entire pide with its spicy, smoky essence. The combination of the crispy crust, gooey cheese, and flavorful sausage makes Sucuklu Pide a crowd-pleaser and a staple in Turkish restaurants everywhere. It is a hearty dish that packs a punch of flavor in every bite.

Sucuk Pide

Peynirli Pide is a classic Turkish flatbread that celebrates the simple yet delicious combination of dough and cheese. Shaped like a boat, the dough is filled with a mixture of cheeses—typically savory white cheese (beyaz peynir) and melting kasar cheese—often enhanced with parsley or an egg cracked on top before baking. As it bakes in a wood-fired oven, the crust becomes golden and crisp, holding the bubbling, molten cheese center. It is usually brushed with melted butter right out of the oven, adding a glossy sheen and rich flavor. Sliced into strips and served warm, Peynirli Pide is a favorite comfort food for any time of day.

Cheese Pide

Peynirli Pide

Our next dish in the restaurant was a version of pide with cheese.

Bread quality was at top again.

The cheese was famous Turkish white cheese and tasted well. Mushrooms were cooked outside and put on top of the cheese was a nice touch. Sprinkles of meat pieces and fresh onions also created a nice mixture.

This dish could get a better score if there was no pomegranate sauce it made the dish so sour.

Sucuklu Pide

We have been following the chef for a while and it was the time to test the food on amsterdam sail day. When we saw the pide we knew it was time to go.

The bread is klasik black sea (karadeniz kayik) version. Tick, crunchy and tasteful. Proper pide bread if you are from north side of Turkey you would know.

Homemade sucuk, eggs and light cheese was perfect. I always prefer it with just sucuk but this version reminds me the Turkish breakfast.
